Cooking up a successful career

Bryan Nystrom's career as a chef has climbed another rung on the ladder of success.

Nystrom graduated from Bar O Boys Ranch with its class of 1999, and specialized in the school's Culinary Arts class taught by Linda Smith.

He has been working in Medford, Ore., for three years at Cafe Dejeuner, but is getting ready to take a new job as Chef de Cuisine at Portland, Ore.'s famed Benson Hotel.

He will work in food management there and supervise a staff of 25.

Nystrom has also apprenticed himself to the Benson's Executive Chef, Franz Popperl for a two-year period.

When he finishes learning from Popperl, Nystrom will qualify as an executive chef himself.

"I have already joined the American Culinary Association," Nystrom said.

The Bar O success story visited his alma mater Monday to co-teach a Culinary Arts class with his former teacher.

"We did cream puffs and chocolate eclairs," he said.

Regarding his temporary students, he noted, "They did really well."

The 23-year-old Nystrom is the son of Mary Ellen Nystrom of Elk Grove and Brett Nystrom of Yreka. He has a daughter, Marissa, who is four years old.

Nystrom's recipes are featured in the April/May 2007 issue of "Distinctly Northwest" magazine.
